But just before the day was over, I got this urge to make a traditional Swiss carrot cake, the way my grandmother makes it. Of course that meant using the <a href=\"http:\/\/www.bettybossi.ch\/BinaryContent\/UploadedFiles\/24frcoWrN83WiN-xnni2YA==2012051110191316.R%C3%BCebli.pdf\" target=\"_blank\" rel=\"noopener noreferrer\">Betty Bossi recipe<\/a> out of <a href=\"http:\/\/www.bettybossi.ch\/de\/Angebote\/Detail\/20024?title=Kuchen-Cakes--Torten\" target=\"_blank\" rel=\"noopener noreferrer\">this book<\/a>, which every good Swiss person should have at home. I had all the ingredients at hand, except for lemon (which I substituted with a lime) and the traditional <a href=\"http:\/\/2.bp.blogspot.com\/-6o-sQmBUUCY\/T2YXJqbLgtI\/AAAAAAAACGc\/bYeCAPzfgRE\/s1600\/ruebli003.jpg\" target=\"_blank\" rel=\"noopener noreferrer\">marzipan carrots<\/a> we usually buy at Migros or Coop (which I don&#8217;t like anyway). I made half the recipe, using three eggs instead of two, because I wanted my 6 inch cake pan to fill up nicely. I let them dry for a day before sticking them (carefully) on the cake. Go here for a <a href=\"http:\/\/theicedqueen.blogspot.ch\/2012\/07\/royal-icing-carrots.html\" target=\"_blank\" rel=\"noopener noreferrer\">Royal Icing carrot tutorial<\/a>!<\/p>\n<p>Recipe adapted from Betty Bossi:<\/p>\n<div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><h3 class=\"p-name jetpack-recipe-title fn\" itemprop=\"name\">Swiss Carrot Cake<\/h3><ul class=\"jetpack-recipe-meta\"><li class=\"jetpack-recipe-servings p-yield yield\" itemprop=\"recipeYield\"><strong>Servings: <\/strong>15 to 20 cm baking tin<\/li><li class=\"jetpack-recipe-time\">\n\t\t\t\t<time itemprop=\"totalTime\" datetime=\"P0DT2H0M0S\"><strong>Time:<\/strong> <span class=\"time\">120 minutes<\/span><\/time>\n\t\t\t<\/li><li class=\"jetpack-recipe-print\"><a href=\"#\">Print<\/a><\/li><\/ul><img decoding=\"async\" class=\"jetpack-recipe-image u-photo photo\" itemprop=\"image\" src=\"http:\/\/minhcakes.ch\/wp-content\/uploads\/130401-carrot-cake-02.jpg\" \/><div class=\"jetpack-recipe-content\"><br \/>\n<div class=\"jetpack-recipe-ingredients\"><h4 class=\"jetpack-recipe-ingredients-title\">Ingredients<\/h4><ul><strong>For the cake:<\/strong><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">250 g sugar<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">5 egg yolks<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">150 g ground almonds<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">150 g ground hazelnuts<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">300 g peeled and grated carrots<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">Zest of 1 lemon<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 tsp baking powder<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/2 tsp cinnamon<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">5 egg whites<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/3 tsp salt<\/li>\n<strong>For the glaze:<\/strong><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 egg white<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">300 g icing sugar<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 tbsp Kirsch<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1-2 tsp water<\/li><\/ul><\/div><\/p>\n<p><div class=\"jetpack-recipe-directions e-instructions\"><h4 class=\"jetpack-recipe-directions-title\">Directions<\/h4><\/div><br \/>\n1. Preheat your oven to 175 C (350 F) and prepare your baking pan.<\/p>\n<p>2. Mix the sugar and egg yolks until light and fluffy.<\/p>\n<p>3. Add the almonds, hazelnuts,\u00a0carrots, lemon zest, baking powder and cinnamon and stir well by hand.<\/p>\n<p>4.\u00a0 In a separate bowl, combine egg whites and salt\u00a0 and whip until stiff peaks form. Then gently incorporate the egg foam to the batter.<\/p>\n<p>5. Bake immediately for approx. 50 minutes in the lower half of the oven.<\/p>\n<p>6. Let the cake cool briefly, then remove from the cake pan and turn onto a cake rack to cool completely.<\/p>\n<p>7. Mix the glaze ingredients together well and pour the glaze over the cake. Decorate with sugar carrots.
