The proportions of chocolate to cream can vary, depending on the use. Some recipes use heavy cream or butter, or both!<\/p>\n<p>For drip ganache, you need equal amounts of semi sweet chocolate and cream (a ratio of 1:1). There are several techniques, but I like using a spoon best for maximum control for the sides &#8211; and then filling up the top of the cake with an angled spatula.<\/p>\n<p>Here&#8217;s a video for you:<\/p>\n<p><iframe src=\"https:\/\/www.youtube-nocookie.com\/embed\/LWDL_Uu4Zec?rel=0&amp;showinfo=0\" width=\"640\" height=\"360\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<p><b>Very important: <\/b>The cake should be\u00a0chilled thoroughly underneath,\u00a0so that the chocolate sets fast. Otherwise, your chocolate will just flow off the sides of the cake and make great puddles on the bottom.<\/p>\n<p>You can drip ganache on fondant, buttercream, hardened ganache, meringue &#8211; whatever you like, the main thing is that is must be cold!<\/p>\n<p>Here&#8217;s the recipe for you to print and use:<\/p>\n<div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><h3 class=\"p-name jetpack-recipe-title fn\" itemprop=\"name\">Drip ganache (truffle ganache)<\/h3><ul class=\"jetpack-recipe-meta\"><li class=\"jetpack-recipe-servings p-yield yield\" itemprop=\"recipeYield\"><strong>Servings: <\/strong>500 g<\/li><li class=\"jetpack-recipe-time\">\n\t\t\t\t<time itemprop=\"totalTime\" datetime=\"Prep time 15 min, resting time 1-2 hrs\"><strong>Time:<\/strong> <span class=\"time\">Prep time 15 min, resting time 1-2 hrs<\/span><\/time>\n\t\t\t<\/li><li class=\"jetpack-recipe-print\"><a href=\"#\">Print<\/a><\/li><\/ul><img decoding=\"async\" class=\"jetpack-recipe-image u-photo photo\" itemprop=\"image\" src=\"http:\/\/minhcakes.ch\/wp-content\/uploads\/minh-cakes-blog-drip-ganache-03.jpg\" \/><div class=\"jetpack-recipe-content\"><br \/>\n<div class=\"jetpack-recipe-ingredients\"><h4 class=\"jetpack-recipe-ingredients-title\">Ingredients<\/h4><ul><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">250g \/ 1 cup heavy cream<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">250g semi sweet chocolate, chopped<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 tablespoon glucose or light corn syrup<\/li><\/ul><\/div><\/p>\n<p><div class=\"jetpack-recipe-directions e-instructions\"><h4 class=\"jetpack-recipe-directions-title\">Preparation<\/h4><\/p>\n<p>Place the\u00a0chocolate pieces in a large bowl.<\/p>\n<p>Pour the cream into a saucepan and heat it on medium-high. Careful of the overflow if you let it boil inadvertently! Just before it starts boiling, remove from the heat.<\/p>\n<p>Pour the cream over the chocolate and let it rest for 1 minute.<\/p>\n<p>Stir the mixture gently. A silicone spatula is best. We want to try incorporating as little air as possible into the chocolate. You can use a stick blender,\u00a0leaving it at the bottom of the bowl, without going up and down.<\/p>\n<p>Stir in the syrup, if using.<\/p>\n<p>Leave the drip ganache to rest for about 1-2 hours, until it has thickened slightly and flows from your spatula in broad ribbons.<\/p>\n<p>Start dripping!<\/p>\n<p><\/div><br \/>\n<div class=\"jetpack-recipe-notes\">You can drip cakes, cupcakes, ice cream, cake pops and more. If you leave the chocolate to harden even more, you can then use it to make truffles. Roll them into balls and dip them in cocoa powder.
