Last week I had so many overripe bananas left over, but didn&#8217;t have time to use them. So I stuck them in the freezer! Today I&#8217;m showing you a great way to use them.<\/p>\n<p>Bananas are a great egg replacement in vegan baking. And since I had some gluten free flour left over, I thought I&#8217;d try that as well. It worked out fine!<\/p>\n<p>Everything starts with a great preparation:<\/p>\n<ul>\n<li>Prepare your baking pan with cupcake liners,<\/li>\n<li>Preheat your oven to 170 C \/ 350 F<\/li>\n<li>Weigh all your ingredients<\/li>\n<\/ul>\n<p>Here we go!<\/p>\n<h3>How to make vegan gluten free banana cupcakes<\/h3>\n<div class=\"fb-video\" data-allowfullscreen=\"true\" data-href=\"https:\/\/www.facebook.com\/minhcakes.ch\/videos\/875138262672924\/\" style=\"background-color: #fff; display: inline-block;\"><\/div>\n<p>For the frosting, you could make whipped white chocolate ganache. In my case, this was NON vegan. I experimented with it here:<\/p>\n<div class=\"fb-video\" data-allowfullscreen=\"true\" data-href=\"https:\/\/www.facebook.com\/minhcakes.ch\/videos\/875165649336852\/\" style=\"background-color: #fff; display: inline-block;\"><\/div>\n<p>And here&#8217;s the recipe for you:<\/p>\n<div class=\"hrecipe h-recipe jetpack-recipe\" itemscope itemtype=\"https:\/\/schema.org\/Recipe\"><h3 class=\"p-name jetpack-recipe-title fn\" itemprop=\"name\">Partly vegan gluten free banana cupcakes with white chocolate frosting<\/h3><ul class=\"jetpack-recipe-meta\"><li class=\"jetpack-recipe-servings p-yield yield\" itemprop=\"recipeYield\"><strong>Servings: <\/strong>12 Cupcakes<\/li><li class=\"jetpack-recipe-time\">\n\t\t\t\t<time itemprop=\"totalTime\" datetime=\"P0DT0H40M0S\"><strong>Time:<\/strong> <span class=\"time\">40 minutes<\/span><\/time>\n\t\t\t<\/li><li class=\"jetpack-recipe-print\"><a href=\"#\">Print<\/a><\/li><\/ul><div class=\"jetpack-recipe-content\"><\/p>\n<p><div class=\"jetpack-recipe-ingredients\"><h4 class=\"jetpack-recipe-ingredients-title\">Ingredients<\/h4><ul><b>For the vegan cupcakes<\/b><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">100 g cane sugar<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">2 large or 3 small overripe bananas, pureed<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 tsp lemon juice<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">120 ml vegetal milk (coconut milk, almond milk)<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">90 g oil<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 tsp vanilla extract<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">140 g gluten free flour<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1 tsp baking powder<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/2 tsp baking soda<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">1\/2 tsp salt<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">Optional (as gluten replacement):1\/16 tsp CMC \/ Tylo powder<\/li>\n<b>For the non-vegan frosting<\/b><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">800 g white chocolate, chopped<\/li><li class=\"jetpack-recipe-ingredient p-ingredient ingredient\" itemprop=\"recipeIngredient\">200 ml Coconut milk<\/li><\/ul><\/div><\/p>\n<p><div class=\"jetpack-recipe-directions e-instructions\"><h4 class=\"jetpack-recipe-directions-title\">Directions<\/h4><ol itemprop=\"recipeInstructions\"><li class=\"jetpack-recipe-directions\">Preheat your oven to 170 C \/ 350 F normal heat, place cupcake liners into baking pan, weigh all ingredients.<\/li><li class=\"jetpack-recipe-directions\">In a separate bowl, combine the gluten free flour, baking powder, baking soda, salt and CMC if using, then set aside.<\/li><li class=\"jetpack-recipe-directions\">In your main bowl, whisk the banana puree, cane sugar and lemon juice until foamy.<\/li><li class=\"jetpack-recipe-directions\">Add the oil and the vanilla extract and stir.<\/li><li class=\"jetpack-recipe-directions\">Add the milk and the flour mixture in alternating additions.<\/li><li class=\"jetpack-recipe-directions\">Using an ice cream scoop, fill the batter into the liners. Bake for 16-18 minutes, or until a skewer comes out clean. After taking out of the oven, remove immediately from the baking tin and leave to cool on a wire rack or on the counter.<\/li><li class=\"jetpack-recipe-directions\">For the frosting, combine the white chocolate and the coconut milk in a saucepan and melt together on very low heat. You don&#8217;t want to overheat the chocolate!<\/li><li class=\"jetpack-recipe-directions\">Once melted, leave the ganache to cool at room temperature for 1-2 hours, without disturbing it.<\/li><li class=\"jetpack-recipe-directions\">When the consistency is like pudding, whip it with your mixer, careful not to overwhip.<\/li><li class=\"jetpack-recipe-directions\">Decorate the cupcakes with a piping bag and the tip of your choice,<\/li><\/ol><\/div><\/p>\n<p><div class=\"jetpack-recipe-notes\">Author: minhcakes.ch\/en\/banana-cupcakes-vegan-gluten-free<\/div><\/p>\n<p><\/div><\/div>\n<p>Have fun making these cupcakes.
